Peggy Martin is a Registered Dietitian who coordinates ISU Extension’s nutrition programs which help low-income families make the best of what they have. She is the oldest of seven children, grew up on a farm and is the mother of two 20 something daughters. She says her daughters used to tell her she was “cheap’, but now they have their own homes they appreciate some of her money saving tips.
Joyce Greving currently works with adult and youth nutrition programs serving low-income families in Iowa. Prior to that she spent 10 years responding to consumer questions about food preparation, nutrition, food safety, textiles, and other home related areas on the Iowa State University Extension Answer Line.
Susan Klein has worked for University Extension for the past 35 years and has been involved in many projects to help Iowans become healthier and make better decisions about nutrition. Susan writes Chef Charles, a newsletter for older adults. Her passion is encouraging Iowans to eat fruits and vegetables.
Ruth Litchfield is a registered and licensed dietitian with over 20 years of experience in healthcare (hospital, clinic) and community (worksite, school) nutrition. Her interests include nutrition education for consumers and professionals, educational technology, health promotion/wellness, and sports nutrition. Her goal is to foster savvy consumers.
Patricia Steiner is a nutrition and food safety educator for Iowa State University Extension. She teaches nutrition, wellness, food safety for all ages in southeastern Iowa. Her special interests are family mealtime, teaching nutrition to children, and total wellness.
Catherine Strohbehn has been at Iowa State University since 1986 in the Hotel, Restaurant and Institution Management program, teaching courses related to food safety, human resources, and foodservice management. She is a registered dietitian with the American Dietetic Association and certified as a professional in food safety by the National Environmental Health Association.
Renee Sweers is a registered dietitian and a Nutrition and Health Field Specialist for Iowa State University Extension. She teaches nutrition and food safety to consumers in Northwest Iowa and supervises nutrition education programs for youth and adults in Woodbury county including EFNEP (Expanded Food and Nutrition Education Program), Pick a Better Snack, and Kids A Cookin. She has worked as a hospital dietitian, consulted in long-term care and taught as adjunct instructor at Community Colleges. As a dietitian and mother of four children, saving money on food and providing healthy family meals has always been a priority.
Jan Temple is a Nutrition Field Specialist based in Iowa City. She has been with Iowa State University Extension since 1987 working as a general home economist and focusing in the area of nutrition and food safety since 1992. Jan’s family prefers to save money by eating at home whenever possible.
Susan Uthoff, ISU Extension Nutrition Field Specialist has worked for ISU Extension since 1971 teaching Iowans about nutrition and food safety. She has been supervising the Linn County Expanded Food and Nutrition Program (EFNEP) since 1978. She received the ISU Regents Award in 1994 and national recognition for her work in the Expanded Food and Nutrition Program in 2004.
Jill Weber is a Nutrition and Health Field Specialist and has worked for ISU Extension since 1984. She has been supervising the Black Hawk County Expanded Food and Nutrition Education Program since 1990. She teaches nutrition and food safety to families in Northeast Iowa. Special projects include ‘Meals to Go’, which teaches cooking skills to EFNEP families and a summer urban youth vegetable garden project. Jill’s mantra is eat less, exercise more, do it forever.
