Crunchy Coleslaw

Our August recipe of the month is Crunchy Coleslaw. This refreshing recipe is one of my favorites. It keeps in the refrigerator for up to four days, but I eat it for any meal or snack so it is usually gone in a day or two. To make this recipe, you break apart a package of dry ramen noodles and add them to a bowl with coleslaw mix, green onions, and a homemade dressing. This recipe is best if you let it marinate in the refrigerator for a couple of hours before serving.

Reading about the progress in Christine and Katy’s gardens has me thinking about using fresh cabbage for this recipe instead of a bag of coleslaw. I rarely use fresh cabbage, so I looked it up on our Produce Basics. To use a fresh cabbage for this recipe, all I need to do is remove any wilted outer leaves, wash it, cut out the core, and chop it into thin strips. If I spy a cabbage at the farmers market, I think I will give it a try.

Cabbage – what’s cheaper?

What is cheaper? The slaw mix or the entire head of cabbage and shredding it yourself?

This was a question I encountered recently when I was planning to make fish tacos.  (If you have access to fresh fish, this is a way to prepare the fish without drowning it in grease by breading and deep fat frying!). I discovered I could pay $ .22 per cup for the prepackaged cabbage slaw, or just $ .11 per cup if I shredded it myself – half the price! That’s pretty impressive. But whether you use the slaw mix or the whole head, either is an inexpensive source of nutrient rich vegetable.

Tropical Cabbage Slaw

During the month of March, grocery stores may run really good sales on cabbage – whole heads as well as the bags of slaw. This is super news because such healthy foods aren’t always THIS cheap! Cabbage is a great source of vitamin C as well as fiber AND is low in calories – or at least is CAN be unless you go drowning it in mayo by making it into coleslaw. Here is a flavorful tip to try – use lemon or pina colada flavored yogurt for the dressing INSTEAD of mayo. It adds great flavor and a little bit of calcium to your diet. Rather than mixing up a big bowl, stir together what you can eat at one meal or snack. If you use fat free yogurt, you have a side dish that is very inexpensive AND easy on your waistline. To make it more fun, add some fruit and nuts (small amounts since they are higher in fat and more expensive). Here are some combinations I like:

  • Diced apple, raisins and walnuts with vanilla yogurt
  • Canned mandarin oranges and canned pineapple with sliced almonds and pina colada yogurt.
