Chewy Granola Bars

chewy granola bars Our June recipe of the month is quick, easy, and delicious – Chewy Granola Bars. For a long time, I wanted to make homemade granola bars, but I never got around to it. When I was given the idea for this recipe, I knew it was time to try it for myself. It turns out that it is very easy and it tastes great too.

These granola bars are great for a snack for children or adults and here is why:

  • The oatmeal is a whole grain, which gives the body both carbohydrates and fiber. So, it gives you energy and makes you feel full. Whole grains have many other benefits for our bodies – we will look into these more as we work our way through a whole grain series on the blog this month.
  • The peanut butter adds protein and fat, which can help tide you over until the next meal.
  • The syrup used to sweeten the granola bars adds a delicious maple flavor.
  • These granola bars only cost 8 cents each! That is a small fraction of the cost of a pre-packaged granola bar.

Breakfast at the Campsite (Making Homemade Granola)

My husband (Daniel) and I grew up in families that loved to go camping. Some of our best childhood memories are from camping trips. When we began dating we discovered our mutual love for camping and began planning some of our own camping trips. Meals are a big part of camping, so we work together to plan meals for our camping trips.

We found out right away that our families had enjoyed many of the same foods for lunch and supper – fresh fruit (especially grapes and berries), foil packets (meat and vegetables wrapped in foil and cooked over the camp fire), grilled burgers and hot dogs. However, we clashed when it came to breakfast. Daniel was happy to pack a box of cereal and grab a handful to munch on whenever he got around to eating in the morning. I wanted a full breakfast with eggs, sausage, toast, and orange juice.

Even after more than 10 years of camping trips, we have not really been able to solve our breakfast dilemma. This summer, we are going to try homemade granola to see if it satisfies us both. Daniel will be able to satisfy his hunger for cereal and I will be able to satisfy my hunger for a full meal when I add nuts and dried fruit and stir in some yogurt.

Healthy Homemade Gift

Are you searching for a healthy gift for a senior, camper, traveler, college student? Consider Crispy Granola, our featured recipe this month. It’s a good snack or breakfast cereal, and makes a great topping for fruit, yogurt, or  ice cream.

Unlike most granolas, this one has no added fat and only about 1 tablespoon of honey per serving. Oatmeal is a whole grain and provides soluble fiber (helpful in lowering blood cholesterol levels). The dried cranberries and nuts add fruit and flavor.

I use old fashioned oats when I make this granola, but any oatmeal will work. I often double or triple the recipe and freeze some of it in freezer containers. If you are making gifts, be sure to package granola in a plastic bag or something airtight before you put it inside a holiday tin or box.

Crispy Granola

Ingredients

  • 2 egg whites
  • 1/3 cup honey
  • 1 teaspoon ground cinnamon
  • 1 teaspoon vanilla
  • Dash salt
  • 3 cups uncooked rolled oats
  • Optional: 1/2 cup chopped pecans or other nuts 1/2 cup raisins, dried cranberries, or other dried fruit.
    *Either old fashioned or quick cooking oats work – both are whole grains.

Instructions

  1. Preheat oven to 325°F. Spray a large shallow baking pan with non-stick cooking spray; set aside.
  2. Put egg whites in large bowl and use a whisk or fork to mix until frothy. Stir in honey, cinnamon, vanilla, and salt.
  3. Add oats plus nuts and/or dried fruit, if desired. Stir until oats are coated with egg mixture. Spread oat mixture evenly on prepared baking sheet.
  4. Bake about 25 to 30 minutes until golden borwn; stir mixture carefully every 5 or 6 minutes to prevent overbrowning.
  5. Remove pan to wire rack and cool completely until crispy and crunchy. Store in airtight container. Freezes well.
